Easy Roasted Tomato Pasta with Garlic Scape Chèvre

While we love a bubbling pot of sauce simmering on the stove for hours, this dish comes together in about 30 minutes. Fresh tomatoes, basil, and creamy garlic scape chevre create a lovely summer pasta.

Ingredients

  • 2 pints cherry tomatoes

  • 1 head garlic, minced

  • 1 bag pasta

  • Basil

  • Garlic scape chevre

  • 1 lb ground beef

  • Salt and pepper to taste

Method

  1. Spread cherry tomatoes out on baking sheet, broil on high for 10-15 minutes or until blackened.

  2. Brown the ground beef in a large saucepan. Add minced garlic and cook for 1-2 minutes. Add roasted tomatoes and bring to a boil. Reduce to a simmer for about 10 minutes or until things are looking saucy.

  3. Add fresh basil, salt and pepper to taste, and ½ container of garlic scape chevre. Stir, taste, and adjust flavors. Garnish with more basil, dollops of chevre, and enjoy!
