Garlic T-bone Steak, Purple Mashed Potatoes & Arugula Salad

I sourced everything I needed for this recipe from the Harrisonburg Farmers Market! The t-bone steaks came from GlenDor, the purple sweet potatoes, and arugula came from North Mountain Produce. It all came together in this easy, protein-heavy weeknight dinner recipe.

Ingredients

Serves 2

  • 2 t-bone steaks

  • 5 tablespoons butter

  • Salt

  • Pepper

  • Italian seasoning

  • Dry minced onion

  • 3 garlic cloves, minced

  • 1 large purple sweet potato, cubed

  • 1 bag arugula

  • Olive oil

  • Squeeze of lemon juice

Method

  1. Preheat oven to 400.

  2. Season steaks with salt, black pepper, Italian seasoning, and minced onion.

  3. In a medium skillet, melt 4 tablespoons butter on high heat and add minced garlic cloves, stirring for 1 minute or so.

  4. Add steaks to skillet and sear on both sides on high heat for 2 mins each side.

  5. Transfer skillet and steaks to the oven and bake for 4 minutes.

  6. To a medium pot, add sweet potatoes and cover with water. Boil until soft.

  7. Drain and mash with a glug of heavy whipping cream, salt, and 1 tablespoon butter.

  8. Toss the arugula with a drizzle of olive oil, squeeze of lemon juice, salt and black pepper.
