Herbal Dressings: Herb & Oil and Mustard & Turmeric

Herbal dressings are a simple way to incorporate fresh herbs in your diet. Use these versatile dressings on salads, roasted veggies, grain bowls, or as a dip for Market bread! Thank you to JMU Nutrition for the recipe!

Herb & Oil Dressing Ingredients

  • 1/2 cup chopped herbs* of your choice (basil, cilantro, parsley, rosemary, chives, etc)

  • 1/3 cup olive oil

  • 1/3 cup vinegar (apple cider, red wine, or rice vinegar)

  • 1 tablespoon honey* or maple syrup* (we like maple syrup best because it blends better)

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

Method

  1. Add all ingredients to a small bowl or jar. Whisk or shake ingredients until combined. Taste and adjust seasonings. Drizzle over everything!

Turmeric & Mustard Dressing Ingredients

  • 1/3 cup olive oil

  • 1/3 cup apple cider vinegar

  • 1-2 teaspoons of dijon mustard (or other mustard of your choice)

  • 1 teaspoon ground turmeric (or 1 inch of fresh)

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon sea salt

  • 1 teaspoon honey or maple syrup

Method

  1. If using fresh turmeric, add all ingredients except oil to blender or food processor. Blend until smooth. Add oil and blend until emulsified.

  2. If using ground turmeric, follow the steps for the Herb & Oil dressing above. Drizzle over everything!
